HOW TO MAKE THE SIP OF THE SEASON AT HOME
We know low and no-alcohol cocktails are the way to go; that’s why here at GuestHouse, we’ve been stirring and shaking up our non-alcoholic menus. Same thrill-of-taste, just minus the morning after regrets.

And if mocktails are your thing, our brand-new sip of the season, Pal-no-ma served at No. 124, is the perfect must-have Summer sip. Beautifully balanced, this zesty, crisp mocktail delivers the perfect blend of fresh citrus and subtle sweetness, with a refreshing grapefruit twist that’s ideal for sunny days.

As an exclusive treat, our lovely No. 124 Bar Manager, Josh Williams, is sharing the recipe so you can indulge at home - or why not enjoy it seaside in the sun at our fabulous No. 124?

Ingredients

Pinch of salt
25ml grapefruit juice
London Essence Grapefruit Soda (top it up!)
15ml lime juice
15ml agave syrup
25ml Everleaf Marine (a non-alcoholic spirit infused with bergamot and sea buckthorn)

Method

Combine all ingredients, except the soda, in a glass.
Add ice and stir until chilled.
Top up with the grapefruit soda.
Garnish with a generous wedge of pink grapefruit.

Meet Donna bartoli

We sat down with Donna, skincare, holistic wellness & personal empowerment expert. She’s one of the Brighton-locals we’re inspired by and here’s what she had to say...
What originally inspired you to get into the skin, inner health, and wellness sphere?
It was a personal journey. In my late 30s, I hit a point where my health, skin, and energy felt depleted. I started deep-diving into whole foods, hormonal balance, and skin health from the inside out. The more I learned, the more I realised how connected everything is - our skin is simply a reflection of what’s happening internally. That led me to retrain, study, and ultimately turn my passion into my profession.

How would you explain what you do?
I bridge the gap between skincare and wellness. As a facialist, health coach, and skin expert, I help people understand that great skin isn’t just about what you put on it - it’s about what you feed it, how you support your body, and the daily habits that nourish from within.

Where do you usually find inspiration for your work?
Through research, experience, and conversations with my community. I love exploring cutting-edge skin science, but I also draw from traditional wisdom - what we eat, how we move, and how we care for ourselves daily has the biggest impact.

You have a day away from work, what would be your ideal way to spend it?
Somewhere by the sea, phone off, fresh air, great food, and no agenda. A slow morning, a long walk, nourishing meals, and an infrared sauna - simple, but restorative.

What are your Brighton recommendations? Both for wellness and in general?
For wellness, I love Beach Box Spa, Cafe Marmalade for nourishing food, and The Florence Road Market for great local produce. For a slower pace, a walk along the undercliff path or a dip in the sea is my idea of perfection.
How do you create a sense of well-being at home?
It starts with simplicity - good food, clean spaces, natural light, and a daily routine that feels grounding. I love rituals like herbal tea in the evening, red light therapy, and prioritising sleep. Wellness isn’t just about big practices - it’s about how you live daily.

Tell us about your juice collaboration with Field Trip Spa.
This collaboration was born from a shared love of real, functional ingredients. We’ve created juices that not only taste good but support the skin and body with powerful nutrients - whole food, no unnecessary sugars, just pure, nourishing goodness.

You emphasise the importance of nourishing the skin from within. How do you integrate whole food nutrition into your skincare recommendations?
Skin health is built from the inside out. I focus on anti-inflammatory, blood sugar-balancing foods that support collagen, hydration, and barrier function. Think high-quality protein, healthy fats, and antioxidant-rich plants - your skincare should complement what you’re feeding your body, not compensate for it.
“Microdosing wellness” is a concept you advocate for. Can you elaborate on what this entails and provide examples of small changes that can lead to significant improvements in well-being?
Wellness doesn’t have to be all or nothing. Microdosing wellness is about layering small, impactful habits into your daily life. Things like morning sunlight, hydration with minerals, deep breathing before meals, and swapping ultra-processed foods for whole ingredients. These shifts, done consistently, compound into lasting change.

With your busy schedule, how do you ensure consistency in your personal wellness routines, and what are some non-negotiable practices you adhere to daily?
I keep my non-negotiables simple: real food, blood sugar balance, daily movement, and prioritising sleep. I don’t overcomplicate things - wellness is about consistency, not perfection.

If people were to only make one change to their routine, what would you suggest?
Prioritise protein and blood sugar balance. It stabilises energy, supports hormones, and has a profound impact on skin, mood, and overall health.
